Nutritious Black Porridge

I grew up drinking porridge almost every single night and porridge has become a Chu family dinner staple. My mom instilled great healthy habits in us, so we understood the importance of eating a hearty meal at a very young age.

Porridge is a highly nutritious meal. It is packed with fiber, antioxidants, protein, and various healthy minerals. Not only does it fuel your body with the best nutrients, but also leaves you feeling warm and full.

I personally love ending my dinners with a hearty bowl of porridge and a conversation of the night that will leave us chatting (or debating) for hours.

Ingredients:

  • 1/4 cup white rice
  • 1/4 cup black rice
  • 1/3 cup mixed beans of your choice (I use: pinto beans, red beans, cannellini beans, kidney beans, lima beans, black beans, and black-eyed beans)
  • a dozen of dried jujube
  • 4 1/2 cup filtered water

Directions

  1. Add the beans and rice to a pressure cooker pot.
  2. Thoroughly cleanse the mixture until the water is clear.
  3. Pour any remaining water out and add the dried jujubes.
  4. Now, pour in the filtered water.
  5. Place the pot into the pressure cooker and cook at high pressure for 10 minutes.
