Simple Shrimp Spring Rolls

This is one of Mama Chu’s favorite meals; she loves when I surprise with a dinner of yummy spring rolls. Spring rolls are very easy to make and the best part is you can add anything you want. I personally love a grilled chicken spring roll dipped in a garlic fish sauce. Give this recipe a try and let me know how you like it via Instagram @elizvchu~

Prep the workstation:

– Before I begin making the spring rolls, I like to make sure all of the ingredients are ready and within reach.

– I pour filtered water into a large round plate, this makes the rice paper dipping process easier – see the picture on the left.

– I like making the spring rolls on a veggie cutting board.

Ingredients

  • 9 pieces of uncooked shrimp
  • 1 cucumber
  • 1 carrot
  • iceberg lettuce
  • mint leaves
  • 3 rice paper wraps
  • paprika
  • garlic powder
  • salt
  • 1 tablespoon of oil
  • water

Directions

  1. Sprinkle an even coat of paprika, garlic powder, and salt on the shrimp and massage the seasoning in.
  2. On a heated pan, drizzle on the oil and cook the shrimp. Once cooked, put shrimp aside and let it cool.
  3. Wash 4 lettuce leaves and set it aside to dry.
  4. Slice the cucumber and carrot into long thin pieces (the thinner the better, especially when it comes to the carrot). Cut the sliced pieces in half to make them easier to wrap.
  5. Now it’s time to wrap!
  6. Dip a piece of rice paper in water and set it on your working station to soften (you don’t need to soak the rice paper in water, a thorough dip will do the trick).
  7. Place 3 pieces of shrimp and the veggies onto the rice paper. Roll the spring roll twice, then tuck in the sides.
  8. Repeat with the two other spring rolls.

Let’s make the dipping sauce

Ingredients

  • 2 spoonfuls of peanut butter
  • 1 tablespoon of low-sodium soy sauce
  • water

Directions

  • Mix the peanut butter and soy sauce in a small bowl. Add small amounts of water as you mix until you reach a thick creamy consistency – see picture for reference

After all that hard work, you are finally done! The dipping sauce really ties the whole dish together. If you are allergic to nut butter, feel free to substitute with tree seed butter or other alternatives. Spring rolls are the perfect hot weather meals; they can be easily packed for on-the-go meals and happily enjoyed in the great outdoors.
