Stir Fry Udon – A Study Fuel Meal
A nutritious and flavorful meal that can be enjoyed by anyone, but it is especially perfect for all the students out there. It is low-budget, quick, and easy to make. I used to eat this all the time back when I was in school and it always left me happy and full. Packed with macro-nutrients, this meal will fuel your body and mind for those intense study/work sessions.
Ingredients
- 1 packet of udon noodles
- 1 hardboiled egg
- 1/2 firm tofu block
- bokchoy
- mushrooms
- 2 tablespoons of oil
- 2 teaspoons of garlic powder
- 2 teaspoons of cumin
- 2 teaspoons of umami seasoning (optional)
- 1/4 cup of sodium-reduced soy sauce
- furikake seasoning
Directions
- Cut the tofu into evenly sized square blocks and place them into a bowl. Sprinkle on the garlic powder, cumin, and umami seasoning, then pour in the soy sauce. Let it marinate for 15mins.
- Add water to a pot. Once the water rises to a boil, add in the udon noodles (you may also cook your hardboiled egg with the noodles). After the noodles and egg are cooked, drain the noodles and set them aside.
- In a heated pan, add the oil and the marinated tofu. Cook for 5 minutes and set aside (save the marinate sauce in a separate bowl, we will use it later).
- In the same heated pan, cook the bokchoy and mushroom for 5 minutes. Then add in the tofu, noodles, and the saved marinate sauce. Stir fry everything together for 5-7 minutes.
- Once the flavor has seeped into the noodles, take it off the heat and put it into a bowl. Finally, add the furikake seasoning and egg on top.
- Now, it is ready to be served! enjoy.
