Stir Fry Udon – A Study Fuel Meal

A nutritious and flavorful meal that can be enjoyed by anyone, but it is especially perfect for all the students out there. It is low-budget, quick, and easy to make. I used to eat this all the time back when I was in school and it always left me happy and full. Packed with macro-nutrients, this meal will fuel your body and mind for those intense study/work sessions.

Ingredients

  • 1 packet of udon noodles
  • 1 hardboiled egg
  • 1/2 firm tofu block
  • bokchoy
  • mushrooms
  • 2 tablespoons of oil
  • 2 teaspoons of garlic powder
  • 2 teaspoons of cumin
  • 2 teaspoons of umami seasoning (optional)
  • 1/4 cup of sodium-reduced soy sauce
  • furikake seasoning
the main ingredients
one of my favorite vegetables
marinating the tofu
tip: cook the egg with noodles
crispy outside, soft inside

Directions

  1. Cut the tofu into evenly sized square blocks and place them into a bowl. Sprinkle on the garlic powder, cumin, and umami seasoning, then pour in the soy sauce. Let it marinate for 15mins.
  2. Add water to a pot. Once the water rises to a boil, add in the udon noodles (you may also cook your hardboiled egg with the noodles). After the noodles and egg are cooked, drain the noodles and set them aside.
  3. In a heated pan, add the oil and the marinated tofu. Cook for 5 minutes and set aside (save the marinate sauce in a separate bowl, we will use it later).
  4. In the same heated pan, cook the bokchoy and mushroom for 5 minutes. Then add in the tofu, noodles, and the saved marinate sauce. Stir fry everything together for 5-7 minutes.
  5. Once the flavor has seeped into the noodles, take it off the heat and put it into a bowl. Finally, add the furikake seasoning and egg on top.
  6. Now, it is ready to be served! enjoy.
